Phased renovation of the 8,000 SF Spago Beverly Hills, upgrading both public and operational areas without interrupting service. Key elements included a redesigned private dining bar and room with new equipment and finishes, a retractable patio canopy with raised fireplaces, and a fully upgraded kitchen prep line and restrooms. The project also included enhancements to the wine cellar system, the main dining finishes, and back-of-house spaces.
Through meticulous planning and coordination, the project maintained Spago’s daily operations, allowing the restaurant to continue welcoming guests throughout construction. The renovation reflects Pankow Builders’ commitment to precision, quality, and collaboration in complex, high-end hospitality environments.
Designing an Elevated Dining Experience
For the renovation of Spago Beverly Hills, Pankow worked hand-in-hand with Wolfgang Puck Fine Dining and architect Mike Holz to modernize a restaurant that is as celebrated for its design as it is for its cuisine. Every intervention was guided by respect for the restaurant’s legacy, executed with precision to enhance functionality, atmosphere, and guest comfort.
The 8,000 SF project required a seamless phased construction approach, allowing the restaurant to remain open and fully operational during the renovation. Pankow carefully sequenced work to minimize disruption, scheduling kitchen and service upgrades overnight while completing public-facing areas between dining hours.
At the heart of the renovation was the transformation of both the front and back of house. A new private dining room and bar were crafted with fine millwork, curated lighting, and contemporary finishes to create a warm, intimate atmosphere. In the main dining area, subtle refinements to materials and lighting elevated the ambiance while maintaining the iconic Spago aesthetic. Behind the scenes, the culinary environment was re-engineered to support efficiency and creativity, complete with upgraded kitchen lines, new work surfaces, and integrated storage systems.
Exterior improvements expanded the dining experience outdoors, where a retractable canopy and raised fireplaces turned the patio into a year-round destination. The upgraded wine cellar and back-of-house finishes further enhanced Spago’s reputation as a restaurant where every detail is considered.
The result is a sophisticated refresh that blends architectural refinement with operational excellence, reaffirming Spago’s place as a global standard-bearer for fine dining design.
